Mini Mixed Green Ginger Salads with A Party With Us

We were able to find all the fresh ingredients below at the Farmer’s Market to put together mini salads to go with our Asian-inspired party menu. This salad is served in Portmeirion Ambiance Pearl Chip & Dip bowl sourced from Suburban Square’s Kitchen Kapers.

2- 1 inch cubes peeled ginger, sourced from Ardmore Farmers Market
1 1/2 honeycrisp apples, sourced from Ardmore Farmers Market
3 large carrots peeled, sourced from Ardmore Farmers Market
2 tbsp honey
1/4 cup rice wine vinegar
1 tbsp soy sauce
1/4 cup water
1/4 cup vegetable oil
Salt to taste
1 bag mixed field greens, sourced from Ardmore Farmers Market
1 scallion, sourced from Ardmore Farmers Market
1 cucumber, sourced from Ardmore Farmers Market
1 medium sized tomato, sourced from Ardmore Farmers Market
Add ginger, apples, carrot, honey, soy sauce, vinegar, water, and vegetable oil to your Vitamix and purée until smooth. Taste for seasoning. Assemble salads in personal size bowls by first lining the bottom of each bowl with greens, then top with sliced scallion, two thin slices of cucumber, and a slice of tomato. Drizzle with your ginger dressing and serve with chopsticks. Enjoy!
